What to put hot sauce on

Food Pairings

Hot sauces have gained popularity in the last decade or so, and many clients who try our sauces love the flavor, but arent sure how to actually USE the sauce. Hot sauces are not just for hot-ones type challenges. They are much more versatile than we give them credit for. They are not only a condiment for your favorite foods, but can add a zing to snacks and be used in recipes while cooking!

Here are a few tips on how to use hot sauces in more ways than on pizza and chicken wings.

Perfect Pairings

Chipotle & Orange Hot Sauce

This is one of my favorite cooking sauces. It can be used in the base of a BBQ sauce, in a rub for beer can chicken, and in mayonnaise for those who love the flavor but want to kill the heat a little!
The flavor profile pairs well with: latin style foods (tacos, burritos, arepas, elote, etc), beer can chicken, ribs, stewed meats and chili, chocolate (brownies, chocolate mousse, etc), mayo for sandwiches and fish tacos

Ingredients: Chipotle in adobo (red jalapeno, water, vinegar, sugar, salt, xanthan gum, smoke flavor, garlic), onion, pure orange juice, apple cider vinegar, honey, sea salt, spices.

Jalapeño, Tomatillo & Habanero Hot Sauce

This is a nice and fresh salsa verde, and what we consider the "fast-food" sauce.
The flavor profile pairs well with: nachos, pizza, subs, avocado toast, guacamole, etc.

Ingredients: jalapeno, habanero, canned tomatillo (tomatillo, water, citric acid), onion, garlic, lime, water, white vinegar, sea salt, honey, spices.

Thai Chili & Banana Pepper

This is our louisiana style sauce, so our version of Frank's Red Hot with a good hit of vinegar and garlic. And just like Franks, it goes on everything!
The flavor profile pairs well with: Everything! But because it is a fermented sauce, it pairs especially well with lentils, asian dishes and gumbo.

Ingredients: thai chilis, red finger long banana peppers, white vinegar, water, garlic, sea salt.

Perfect Pairings

Pineapple & Habanero Hot Sauce

This sauce was developed to eat with jerk chicken but has since become a fam favorite for lots of foods!
The flavor profile pairs well with: fish and seafood (tuna steak, shrimp, etc), coconut curries, jerk chicken, fried rice and asian dishes to balance the soy, and a great addition in maple for pancakes and waffles!

Ingredients: habanero, pineapple, onion, garlic, white vinegar, lime, sea salt, spices (mustard).

Blueberry & Scotch Bonnet Hot Sauce

This sauce was created for raw applications like ceviche and oysters, but is an all around game changer.
The flavor profile pairs well with: raw fish and seafood (ceviche and oysters), grilled meats, dairy (cheese platters, baked brie, bagel with cream cheese, ice cream in the summer!), and a great addition in maple for pancakes and waffles!

Ingredients: scotch bonnet, blueberry, pure orange juice, scallion, organic cane sugar, lime, white vinegar

Tamarind & Scotch Bonnet Hot Sauce

This sauce has 2 waves of heat, with notes of smokyness and sweetness, giving a little bit of a HP vibe.
The flavor profile pairs well with: steak, anything on the BBQ, breakfast eggs, mac & cheese, fish & chips (or anything fried!)

Ingredients: tamarind pulp, scotch bonnet, chipotle in adobo (red jalapeno, water, vinegar, sugar, salt, xanthan gum, smoke flavor, garlic), water, garlic, cilantro, maple syrup, spices, apple cider vinegar, white vinegar, lime, sea salt, organic cane sugar

Sea Buckthorn & Habanero Hot Sauce

This is a sour hot sauce, very different from a vinegary one. The sea buckthorn is sour with a tropical fruit aroma, and the habaneros are also a floral pepper, so it hits a little more in the nose / nasal side.
The flavor profile pairs well with: veggies, fish and seafood, eggs in the morning

Ingredients: sea buckthorn puree, habanero, onion, carrot, apple cider vinegar, water, sea salt.

Gin & Jerk Hot Sauce

This sauce was developed for Terre à Boire's award winning gin. Because of the complex flavor profile of jerk, it pairs well with nearly everything!
The flavor profile pairs well with: grilled proteins, tofu and mushrooms, fried chicken, nachos, in mayonnaise to serve along grilled calamari, etc.
